favorite fall recipe

I thought I would share with you my absolute favorite fall recipe - Pumpkin Pancakes with Apple Cider Syrup! Yum! It actually came from Rebecca, so I shouldn't really claim it as mine. It has become a tradition in our family to have them for dinner on Halloween night. Mmmmmm

Pumpkin Pancakes
1 cup flour
1 Tbsp sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp pumpkin pie spice
2 eggs, separated
1 cup milk
1/2 cup canned pumpkin
2 Tbsp oil
Combine dry ingredients in a large bowl. Wisk egg yolk, pumpkin, milk and oil in a separate bowl. Stir into dry ingredients until moist. Beat egg whites with an electric mixer until they form soft peaks and fold gently into batter.
Easy Peasy, right? Also, please note that this recipe makes a small amount. If it is just my family eating, I double it. If I want left overs, I triple it! I also double the syrup.
Apple Cider Syrup
1 cup sugar
2 Tbsp corn starch
1/2 tsp pumpkin pie spice
2 cups apple cider (I just use apple juice)
2 tsp lemon juice
1/4 cup butter
Mix everything except the butter in a saucepan. Bring to a boil over med heat for 1 minute, stirring almost constantly. Take off heat and add butter, stirring it in until melted. Serve warm.

  2. Coming to your home for pumpkin pancakes has been my favorite fall tradition. Thank you for including us in that. I will carry it on in our new home next year. I'm almost about to cry as I write this!
